This was a pretty simple dish with tons of flavor.  There are many variations of both the chicken and the way that is cooked as well as various recipes on the Salsa Verde.  I prefer to use chicken thighs instead of a whole chicken however I sometimes will go both ways (so to speak) on it.

My way of doing this is somewhat Italy meets Mexico.  I love the mixture of flavors.  The Italian seasonings as well as the freshness of Cilantro for the Salsa Verde.  I hope you try it and I hope you like it.  If you like it, send me $500...Just kidding.  So put on some Steely Dan (Goucho is a good choice), get your favorite beverage, Cabernet, Guiness perhaps or even a Dr. Pepper, I'm not here to judge,  and get cooking!  Enjoy...

We took a quick 4 day weekend trip to San Antonio and spent a little time on the wonderful Riverwalk.  We really love to stay at the Westin Riverwalk and sit outside and sip on coffee while looking at the beautiful landscaping.  In the distance you can hear a small waterfall as you watch the early morning joggers do their thing.  It's people watching and relaxation at its finest and I love it!

It's not often that I'm treated to a wonderful dinner in the evenings.  But my lovely wife decided to make some homemade Lasagna.  She is really a good cook but lets me do most of the cooking because...well basically because she doesn't have a blog and I do.  So...
 
This is her recipe and it is fantastic.  It's simple and doesn't take too long to prep but it's very flavorful.
 
I hope you try it and Ill give her all the glory on this one.
 
 

 
Lasagna Ingredients:
 
1 Lb Ground Meat
1 Lb Ground Pork
1 Jar Bertolli Olive and Garlic Pasta Sauce
1/4 Cup Frozen Seasoning Blend - Pictsweet - Onions and bell pepper basically
1 Small can tomato sauce
1 and 1/4 Cup Beef Broth
1 Large Egg
2 Tbl Spn Tone's Italian Seasoning (or your preference)
16 Ounce Package of grated mozzarella
8 Ounce grated parmesan
16 Ounce Container of Ricotta Cheese
12 Uncooked Lasagna Noodles
Salt and Pepper to Taste
1 Tbl Steak Seasoning
1 Tbl Spn Garlic Powder
 
Lasagna Instructions:
 
Is your mouth watering yet?
 
Preheat oven to 375.
On medium high heat, brown the ground meat and ground pork. As it browns mix in the seasoning blend.  Dust with the steak seasoning and garlic powder and blend well.
Lower heat to medium and add the jar or Bertolli  Pasta Sauce and stir, add beef broth, tomato sauce, Italian seasoning.  Bring to a boil stirring occasionally.  Lower heat to medium low and simmer for about 15 minutes.  Taste the mixture and adjust seasonings accordingly.
 
Meanwhile, in a medium to large bowl, scramble the egg and mix the ricotta cheese together with the egg.  Mix 12 ounces of the mozzarella cheese and half of the parmesan and mix with the ricotta / egg mixture.  Mix well.  Use a 9x 13 (or something close) baking pan or glass dish and put 1.5 cups (approximately) of the sauce on the bottom and spread to cover the bottom. 
 
Take 4 of the Lasagna noodles and put on top of the mixture.  You may have to putt some long ways and the other across the back to get good coverage.  Do the best you can. Put another layer of meat, about 1 cup on top of the noodles.  Then add half of the cheese mixture on that layer.  Take 4 more noodles and lay across the top mixture.  If you have to add more or break some to fit, that's ok.
 
Add the remaining meat mixture on that layer of noodles.   Then add the remaining cheese mixture.  Top with 4 more noodles.
 
Cover with foil tightly and bake for 50 minutes.  Consider putting the pan on a large cookie sheet because it will most likely bubble over.
 
After 50 minutes, remove from oven and remove the foil.  Add the remaining mozzarella and parmesan cheese on the top.
 
Put back in the oven for about 15 minutes or until cheese is bubbly and dancing on top!
Ummm good.
 
Remove from oven (don't forget to turn the oven off) and let sit for about 15 minutes if you can stand it!

I love Cajun food and I love Tilapia so this just felt so right.  I eat a LOT of Tilapia and chicken to maintain my manly figure and I tend to go from Lemon Pepper to Cajun a few times a week then mix in chicken all around it.  So that's pretty much what I eat during the week and then I let it loose on the weekend.  I think Tilapia is a great way to lose a little weight.  When I need to drop a few pounds I can eat it for 3 or 4 days (yes I get tired of it by then) and I can drop 2 to 3 pounds easily.

My Son Is Going To Work At Disney World

Well, I'm about to head off to Florida to Disney World.  My son Chase is going to work for them in the College program.  I'm a little bummed, a little stressed, very excited for him, a little excited for me but I'm surely going to miss him.  I've seen Chase every day just about for the past 20 years and words simply can't describe how much I love him.  He's really a great kid!  We are DVC members and but we just returned from a 9 day trip in July and we're out of points.  My brothers are also DVC members and Jim was able to scrape up enough points for us to stay at Disney's Old Key West for the week.  Chase will check in Tuesday January 15th.  He has already met up with some kids from New Jersey and plans to stay in the dorms with them.  We hope to see him on his first day at work.  We're not sure which park he will be working at but we think it's Disney Hollywood Studio. 

So, here we go, sending one of my 3 son's off to Florida for at least 6 months.  Jeez! How am I going to handle this...

This Szechuan style sauce is one of my go to sauces.  I can change it up and basically call it what I want.  I can also use it with any kind of chicken, pork or beef.  I like to marinade it with chicken thighs though, that is my favorite way to cook it.  Another suggestion is to use it with Chicken Breast fingerlings.  It makes a great party snack.
