Cajun Cooking



I live in Southeast Texas, about 30 minutes from South Louisiana and the Cajun cooking capitol of the world.  Just about everyone in this area has Cajun roots or ties.  Cajun cuisine is spicy and saucy with rich roux's and is a paradise for your taste buds.  So living so close to Cajun country, Cajun cooking is simply part of my DNA.  Over the next week or so I will be posting some dynamite recipes including Crawfish Cornbread, Shrimp Etouffee, Jambalaya and I may show you how to make a quick easy Gumbo.  My mouth is watering just thinking about it.  So, keep your eye out, get your taste buds ready, grab a glass of water or your favorite beer and get ready for some real coon-ass cooking!  Laissez Les Bons Temps Rouler...Let The Good Times Roll!

OK, I'm a Dallas Cowboys fan and I'm easily inspired by a big Cowboy's game.  I do my own tailgating just about every weekend during football season and I hope that my Cowboy Slider Burgers inspire you to create something special during your favorite teams game.  I'll round out this special tailgate party with some of my Famous Bar-B-Q Beer sausage with Asian Honey Pesto potatoes.

Brine Ingredients:
 
3 cups water
1/4 cup salt
1/4 sugar
2 tbl spns sugar
1 tspn garlic powder

Pasta Encheladas

This is an easy quick recipe that we found on Pinterest.com.  I made some subtle changes though to fit my style of cooking.


Ingredients:
1 tbl spn olive oil
1 Red Bell Pepper
2 Cloves Garlic
1/2 of an onion
1 tsp salt
2 tbl spn chili powder
