Salt Grass Queso Fresco



S&M Kettle Cheese Dip





This is my interpretation of the Saltgrass Queso Fresco.  It's more of an inspiration because I've taken some liberty's with it. I use white American cheese, Cilantro etc.,  but I also add a western flavors to dovetail with our Smoke House offerings.  We call it S&M Kettle Cheese Dip!

S&M Kettle Cheese Dip does require some planning simply because it has cooked brisket in it. So be repaired.

Our first time trying this was on a Disney trip in Florida.  We rented points at www.dvcpointsforrent.com and did our planning at www.wdwdisinfo.com.  We ate outside the park one evening to save some money and found this gem at the Salt Grass!

Here is the recipe for S&M Kettle Cheese Dip:



Small dab of butter 


1/4 cup season blend or chopped onion and bell pepper

Melt butter, add the onion mix and cook on medium until onions are soft.



Add:

1/4 pound Sliced White American Cheese one small slice at a time and stir.  




Add:

1 tsp of each - Chili powder, Paprika, Garlic Powder and 1/2 tsp Cayenne, 1 tbl spoon heavy cream or milk, 2 tbl spoon water, 1 tbl spoon Cilantro.  Stir well.  Let the cheese melt completely.




Once the cheese is completely melted, serve in the skillet or pour into a bowl and serve with a 1/4 cup of chopped brisket and 1/4 cup Pico de gallo.  Mix in front of your guests to show off the freshness.

TIP:  For a thinner dip, add more water.
