Pasta Encheladas

This is an easy quick recipe that we found on Pinterest.com.  I made some subtle changes though to fit my style of cooking.


Ingredients:
1 tbl spn olive oil
1 Red Bell Pepper
2 Cloves Garlic
1/2 of an onion
1 tsp salt
2 tbl spn chili powder

1 tbl spn ground cumin
1/2 tsp garlic powder
4 oz can green chilis
2 - 10 ounce cans green chili sauce
1 cup enchilada sauce
1 bag pre-cooked fajita beef (I used half the bag)
1 bag pre-cooked fajita chicken (I used half the bag)
 Several dashes of your favorite Mexican hot sauce - I used Valentina
2 cups grated cheese (Mexican Blend)
1 Cup Sour Cream
1 box Penne Pasta

Cook pasta till done, drain and set aside
Heat oil
Saute bell pepper, onion, garlic till tender
add fajita meat and cook until hot
Add all of the sauces, green chili's, and seasonings and cook for 10 minutes on simmer.  Try not to bring it to a boil.  Let the flavors dance for a little bit then add the cheese.  Stir until melted then add the sour cream - careful not to let it boil or sour cream may curdle.  Let it dance for about 10 minutes.

Add the cooked pasta and mix thoroughly.
Top with your favorite topping and enjoy!
