Spicy Hawaiian Chicken




From 2008 to 2010 we ran a concession business and visited festivals and flea markets in our area.  It was a lot of fun and we go to meet a lot of cool people.  Through our trials of finding the perfect food offering we landed on something that we called Hawaiian Chicken Bites. 

I have video's of people doing taste tests and I somehow managed to lose them.  Their reaction was amazing. This sauce is so good and it's perfect with chicken or pork.  It's best if you let the meat dance in it overnight in a sealed bag.  Then as you cook your chicken or pork, baste it liberally and give it one final brushing as you take it off the grill / wok / skillet.  I hope you try it and enjoy!

We use chicken thighs and or pork butt.  Breasts work fine as well but they dry out too much really.

We cut the chicken or pork in 1 inch cubes then marinate at least 2 hours.  Over night preferably.
 
 

Spicy Hawaiian Chicken Marinade
 
1/2 Cup Soy Sauce
1/2 Cup Dry Sherry
1/4 Cup Olive Oil
1 Cup Pineapple Juice
1 Tbl spn Garlic Powder
1/2 Cup Brown Sugar
1 Tbl Spn Oregano
1 Tbl Spn Red Pepper Flakes
1/2 Tble Spn Ground Cumin
 
Serv this over your favorite rice dish such as traditional fried rice or perhaps creole garlic rice.
