Simple and flavorful!


Struggling for something to make during the week that doesn't take forever to prep and cook?  Try this easy version of Grilled Polynesian Chicken and Shrimp with Grilled Green Beans.  This is also one of those dishes that if your trying to impress that special someone with something flavorful and exotic, will seal the deal....so to speak.  Only a few ingredients and it can be complete in less than an hour.  Ohhhh so easy!


OK lets get on with it!

Ingredients:
1 pound chicken breast
1 point large shrimp
1 Jar Polynesian Sauce / marinade
1 tbl spn minced garlic
1/2 tbl spn red pepper flakes (Optional)




Combine the sauce, garlic and red pepper flakes in a bowl and stir to mix.  Separate the chicken and the shrimp and put in bowls.  Pour enough of the marinade over the chicken and shrimp and cover all of it and mix it very well to make sure all meat is covered.  Save 1/2 cup or so of the sauce for basting.

Place in refrigerator for at least 30 minutes if you can.  If not, no sweat.  Start cooking.

Heat the grill and get it very hot.  Use a griddle or a flat cooking surface for the grill so that the chicken and shrimp don't fall in.  Your going to slice the chicken as it cooks.




Place the chicken breasts on the grill directly over the heat.  Watch for flare ups.  Cook on each side for a few minutes.  As it continues to cook, move to a part of the grill away from the direct fire.   After about 7 minutes of cooking, slice the chicken then cube it.  Baste it well with the left over sauce.  Stir the chicken and keep an eye on it.  Move over the direct fire and off again as needed.  Add some pineapple slices and red bell pepper at this time if desired. 

Once the chicken is done, remove from grill or set it off to the side.  Add the shrimp to the grill.  Stir and flip continuously to keep from burning.  Baste liberally.  Once done, remove from heat.

Add the green beans to the grill and stir fry with a little of the Polynesian Sauce.  Stir fry for about 5 minutes or until the desired doneness (is that a word?).




 Remove from the grill, open a bottle of your favorite veno, put on some Bozz Scaggs or perhaps some Seals and Croft and enjoy!
