Cuban Pulled Pork Tacos with Orange Mojo Sauce

Cuban Pulled Pork Tacos with Orange Mojo Sause
The Cuban pulled pork Taco's are full of rich flavor.  It starts with a light, fresh, flavorful marinade that brings out the delightful flavor of the pork. This Bobby Flay inspired dish is a great party pleaser.  When we visited Austin in November, we visited an outdoor mall called the Domain.  The food court was a large area with artificial turf, picnic area's, a stage with a live band and of course food trucks.  We zeroed in on a Cuban kitchen food truck that offered a variety of Cuban inspired dishes.  This is my interpretation of a few of the Cuban dishes we sampled combined with the Bobby Flay Cuban pulled pork Tacos.  Enjoy!

Marinade for Cuban Pulled Pork:
1 cup Canola Oil
5 cloves of garlic
1/4 fresh Basil
1/4 fresh Cilantro
1 tsp Lime Juice
dash salt
Put everything in a blender or bullet and puree.  Set aside.



Orange Mojo Sauce:
1/4 cup Ketchup
1 tbl spn Cajun or spicy mustard
1 tbl spn Orange Marmalade
1 tsp minced Garlic
1 tsp Apple Cider Vinegar
1 tsp Worcestershire Sauce
1 tsp honey
1/2 tsp Cayenne Pepper
1 tsp lime juice
Dash of salt - to taste
Mix everything very well and set aside.
The Pork:
I used about a 2 pound pork butt, bone in.  Place the pork butt or pork shoulder in a large dish and cut small slices in several places.  Pour about half of the Basil marinade all over the pork butt on both sides and run in liberally.  Let marinade for at least an hour, over night if you have the time.  Save the other half of the marinade coat the pork just before putting into oven.

Braise the Pork:

In a skillet, heat about a tbl spn of Canola oil then place the pork butt into the skillet and braise each side - about 7 minutes per side.  This will help you get a little bit of char and improve the bark.

In a skillet braise - lightly cook the pork on each side for about 7 minutes each side.




Slow cook the pork:
Remove pork from refrigerator about 30 minutes before ready to cook.  Preheat the oven to 300.  Place the pork, fat side up in an oven proof metal pan with sides.  Pour the remaining marinade over the pork.  Cover the pork with foil and place in the oven and cook for 4 hours. 
Remove from the oven and let rest for 30 minutes.
Meanwhile....Prepare the Chipotle Mayo!
Chipotle Mayonnaise:
1/2 cup Mayonnaise
1 tbl spn Chipotle's blended in a blender or bullet
1 tsp garlic powder
Dash Worcestershire Sauce
Mix everything very well and set aside.
Shred and pull the pork with a fork and your fingers to create small bite size pieces.  Add the Orange Mojo sauce to the pulled pork and mix well.

On a tortilla, spread a small amount of the Chipotle Mayonnaise and place a serving of the Cuban Pulled Pork in the center of the tortilla.  Top with Feta cheese and Cilantro!
Serve with Garlic & Parmesan Baked Fries!  Uhhh, YUM!
