Con Queso Au Gratin Potatoes


This is a rich variation of the traditional Potatoes Au Gratin.  I'm sure there are tons of recipes for this kid friendly version of the old classic but this inspiration came to me in church this morning.  Not sure why, but it did.  Con Queso Au Gratin Potatoes are sure to be a hit with the kid's!

Use your favorite version of Con Queso or try the simple recipe below.



Con Queso Au Gratin Potatoes Ingredients:

5 Medium potatoes, sliced
2 Tbl Butter
4 Tbl Flour
1 Cup Milk
Dash of Garlic Powder
Salt and Pepper to taste
2 Cups Con Queso

Con Queso Recipe:

1 large block of Velveeta Cheese cut into cubes
1 can Rotel Tomatoes
1 can Green Chili's.

Melt cheese in microwave or medium pot on stove.  Stir in tomatoes and chili's.  Continue to heat and stir until completely melted.

Con Queso Au Gratin Instructions:

Preheat oven to 375

Line an oven proof dish with all of the potatoes.  Meanwhile:


Slice the potatoes about 1/4 inch or less.  I used both golden and red potatoes.  That's what I had in the pantry soooo....


In a medium skillet on medium heat, melt the butter, the stir in the flour to create a light roux. Add salt and pepper then add the milk.  Stir frequently and bring to a boil.  Lower the heat to medium low then add the con queso.  Stir and add the garlic powder.  Stir to simmer for about 3 minutes.


Add the butter and the flour and make a nice light colored roux.  Then add the milk and bring to a boil.  Then add the con queso cheese.  This makes a really nice sauce!


Pour the sauce over the potatoes.

Pour the Con Queso Au Gratin Sauce over the potatoes and bake on 375 for about 25 minutes.


Bake for about 25 minutes or until the potatoes are done.
