Empanadas

Empanadas

This is my version of the beef filled pastry that's become a Latin favorite.  You can fill the flaky crust with your own concoction of meats mixtures or seafood.  This version is a fusion of Latin and Spanish seasonings.

Queso Stuffed Pablano Peppers

Queso Stuffed Pablano Peppers

Queso Stuffed Pablano Peppers

Inspiration for my stuffed Pablano Peppers came from a fishing trip I took to Mexico in May.  This cheesy, meaty, flavorful dish will satisfy all areas of the taste buds.  The Pablano's provide a just above mild heat while the flavorful cheeses sooth the taste buds while bringing a smile to your face.

Saltgrass Queso Fresco

Salt Grass Queso Fresco

S&M Kettle Cheese Dip

This is my interpretation of the Saltgrass Queso Fresco.  It's more of an inspiration because I've taken some liberty's with it. I use white American cheese, Cilantro etc.,  but I also add a western flavors to dovetail with our Smoke House offerings.  We call it S&M Kettle Cheese Dip!

Homemade Nachos
Chorizo Enchilada Nachos

So I had some meat left over from my Enchilada Bites and I thought I would continue the Tex Mex theme (which I love by the way) and make some Nachos!  I'm a Nacho freak and I'm always experimenting with different types and this one turned out really good!  Very flavorful and a hit at parties.  Try and enjoy!

Baked Chicken with Salsa Verde and Mozzerella Potatoes

Baked Chicken With Salsa Verde and Mozzerella Potatoes

This was a pretty simple dish with tons of flavor.  There are many variations of both the chicken and the way that is cooked as well as various recipes on the Salsa Verde.  I prefer to use chicken thighs instead of a whole chicken however I sometimes will go both ways (so to speak) on it.

My way of doing this is somewhat Italy meets Mexico.  I love the mixture of flavors.  The Italian seasonings as well as the freshness of Cilantro for the Salsa Verde.  I hope you try it and I hope you like it.  If you like it, send me $500...Just kidding.  So put on some Steely Dan (Goucho is a good choice), get your favorite beverage, Cabernet, Guiness perhaps or even a Dr. Pepper, I'm not here to judge,  and get cooking!  Enjoy...

In Texas we love Tex Mex cuisine.  We have Mexican restaurants everywhere and one of the most popular items on any Tex Mex menu is Quesadilla's.  Tina...EAT! (Use your best Napoleon Dynamite impression)...

It's funny, inspiration strikes at the strangest times and even the strangest places.  Let me 'splain...My lovely wife is all over the Flea Market Flip stuff all of a sudden.  As if I need more unfinished projects in my life, right.

Salsa Chicken Casserole

Salsa Chicken Casserole

This really turned out tasty and full of flavor!  I have been in the mood for Mexican flavor lately and something as simple as a bottle of Mexican Flavored hot sauce inspired me.  Jeez, I'm easy!  It may look like an event to cook this but it's really simple.
