Chorizo Enchilada Bites

Chorizo Enchilada Bites





OK the Super Bowl is about to start and I'm running late, so lets get to it.  No stories, just good grub!



Ingredients for Choriza Enchilada Bites:

10 Corn Tortillas
1 Can Enchilada Sauce
1 Can Green Chili's
1/2 Chopped onion
1 small can tomato sauce
1/2 Red Bell Pepper Chopped
1 pack Lowery's Taco Seasoning
1 Tsp Chili Powder
1 Tsp Cumin
1 Tsp black pepper
A few pinches of salt
1 lb 80/20 Ground Meat
1 lb ground Chorizo
1 Cup grated cheese - Pick your favorite

Instructions:

Brown ground meat and chorizo in a skillet on medium high.  Once it's about half way done, scoot it aside in the pan and add the onions and bell pepper on the other area of the skillet.  As they cook, incorporate into the meat.  Add green chili's, chili powder, cumin, salt and pepper.  In a small bowl mix tomato sauce with the taco seasoning.  Pour into meat and cook on low for about 10 minutes.  Taste and add salt accordingly.

 I like to add my dry seasonings to the meat before mixing.


For the tortilla's, heat on medium about 1/2 cup of oil and dip the corn tortilla's one at a time for about 10 to 15 seconds per side.  Use tongs....duh!  Remove and put on paper towel.  Repeat until all are done.  We are looking to make them pliable.
Dip the corn tortilla into the enchilada sauce

OK lets put it together...
In another pan heat on low the enchilada sauce...Dip each tortilla in the enchilada sauce quickly and flip to the other side.  It's just a quick dunk and saturation.  Place a spoonful of meat in the middle of the tortilla and sprinkle grated cheese on top.  Roll over the tortilla and place on a baking sheet seam side down.




Bake on 350 for about 15 minutes.

Remove from oven and slice in half.  
Enjoy!  Try dipping them in enchilada sauce.
