Preheat oven to 350
Brown 1 pound of lean ground meat
After meat is brown (and smelling amazing)
Add 1/4 Cup cilantro
Add 1/4 cup Feta Cheese
Add 1/4 Cup Mild Cheddar Cheese
Stir thoroughly until cheese is melted.
Add one can of enchilada sauce. Add 1/4 tsp cayenne pepper.
Bring to boil then lower heat to a slow simmer. Cook about 12 minutes then remove from heat and let it thicken for about 5 minutes.
Heat 4 or 5 corn tortilla's in the microwave for about 15 seconds to make them more resilient.
Spoon a portion of the meat onto the corn tortilla and add more cheese to your liking
Carefully roll the corn tortilla over and stick with a tooth pick to keep it from unfolding.
Cook on 350 for about 15 minutes or until the corn tortilla is crisp.
As an alternative or in addition: Simply use precooked taco shells.
Top with cilantro and a few dashes of your favorite hot sauce. I like Valentina.
A great side dish is Taco Rice by Knorr.

I like that you have Feta in there :-) Makes it a little different!
ReplyDeleteThank you With A Blast. Feta is pretty rich in flavor so I find that I have to be careful with how much I use or it will over power it.
