Ok, no real story here on this one.  I took some center cut pork out a few days ago (so tired of chicken and fish) and I had to do something with it.  So....stir fry of course.  I cooked this for my lovely wife Michele!  I love you babe!

In 2010 we had a concession business.  We traveled around Southeast Texas to various festivals and we were a mainstay at Larry's Trade Days in Winnie Texas each month.  We started out selling smoothies and lattes but it didn't take long for us to realize that we needed to sell food if we were going to actually make any money.

This Szechuan style sauce is one of my go to sauces.  I can change it up and basically call it what I want.  I can also use it with any kind of chicken, pork or beef.  I like to marinade it with chicken thighs though, that is my favorite way to cook it.  Another suggestion is to use it with Chicken Breast fingerlings.  It makes a great party snack.

From 2008 to 2010 we ran a concession business and visited festivals and flea markets in our area.  It was a lot of fun and we go to meet a lot of cool people.  Through our trials of finding the perfect food offering we landed on something that we called Hawaiian Chicken Bites.
