Southwest Chipotle Quesadillas

In Texas we love Tex Mex cuisine. We have Mexican restaurants everywhere and one of the most popular items on any Tex Mex menu is Quesadilla's. Tina...EAT! (Use your best Napoleon Dynamite impression)...
This is my version of Tex Mex Quesadillas. Nothing magical other than Scotty B whipped it up and that's special enough...right? Indulge my ego and just say right. Thank you.
I used my go to all-purpose rub with a little twist to create a really spicy Tex Mex flavor. For the marinade I used Kraft Southwest Chipotle Marinade. The flavors mixed together were really good and my taste buds were dancing.
So, here is Scotty B's Southwest Chipotle Steak and Chicken Quesadillas...Enjoy!
Ingredients for Southwest Chipotle Steak and Chicken Quesadillas:
1 Ribeye Steak - We didn't get to eat our steak Friday so I used that. You can use Skirt Steak if you prefer.
1/2 Pound Chicken Thighs cut and cubed.
1 Bottle Kraft Southwest Chipotle Marinade
Scotty B's All Purpose Rub - Add 1 Tsp Fajita Seasoning, 1 Tsp Mexican Oregano, 1 Extra Tsp Cayenne Pepper
1 Red Bell Pepper
1 Green Bell Pepper
1 Cup Green Onions
1 Bag of small or medium tortillas
1 Cup of grated cheddar cheese.
Instructions for Southwest Chipotle Steak and Chicken Quesadillas:
Preheat oven to 400.
Rub steak with generous amount of Scotty B's enhanced All- Purpose Rub on both sides. Soak steak well with half bottle of the Kraft Southwest Chipotle Marinade. Do the same with the chicken incorporating seasoning and rub well. Let set for about 2 hours. If you have the time and luxury let it set overnight.
Cut bell peppers and green onions in small pieces.
Put the chicken and steak in the oven in separate pans.
Cook steak for about 12inutes in oven. Flipping it after about 5 or 6 minutes. This puts it in the medium rare range but keep and eye on it. Oven temps vary as they say. Remove from oven and cut into cubes or slices, your preference. Pour the juices from the pan all over the steak. Ok, my mouth is officially watering.
On a cookie sheet, place tortilla's face down. Sprinkle cheese covering each tortilla. Add steak, chicken or mix as you like. Add Bell Peppers and onions. Top with more cheese. Place another tortilla on the top. Put as many as you can or as you wish on the cookie sheet.
Bake in oven for about 7 minutes or until cheese is completely melted and all of the flavors have consummated...so to speak.
Remove from oven, look your lover in the eye, smile and think of me....As you take a bite of Scotty B's Southwest Chipotle Steak and Chicken Quesadillas.
Enjoy!
Once the chicken is done, remove from oven.
Continue to cook the chicken for a total of about 45 minutes or until its completely cooked.
