Disney's 3 Cheese Lobster Macaroni



Disney's Lobster Mac N Cheese
 
 
 
Disney's Three Cheese Macaroni is a real treat!  Featuring rich and creamy Gruyere cheese and of course Lobster tail, this Macaroni dish is fantastic.  Several Disney spots offer various Lobster Mac N Cheese dishes such as Disney's Animal Kingdom but this Lobster Macaroni & Cheese recipe is more similar to the version served on Disney's Cruise Line. We added Crawfish to enhance the flavor and to save a little money as well :-)   So, we'll call this recipe Lobster & Crawfish Mac N Cheese Disney style!

Ingredients for Disney's Lobster Macaroni
 
 
2 Tbl Spn Butter
1/2 Cup Chopped Onion
2 Celery Stalks Chopped
1/2 Cup White Wine
4 Cups Milk or Heavy Cream
1 Tbl Spn AP Flour
1 Cup Gruyere Cheese - Grated
1/2 Cup Sharp Cheddar
1/2 Cup (insert your favorite Italian Cheese)
 
2 Cups Rigatoni
 
1 or 2 Lobster Tails (I used one)
2 Cups Cooked Crawfish
 
Topping
2 tbl spns butter
1/4 Cup Bread Crumbs or Panko
1/4 Cup Grated Parmesan
 
A few notes:  Disney uses Tarragon and Leeks and I did not.  I also use Garlic Powder, Oregano and Basil in mine, but I didn't list it here. 
 
Instructions for Disney's Mac N Cheese
 
Preparing for the Lobster:  Bring a medium pot of salted water to boil.  Place Lobster Tail in boiling water, lower heat to medium, and let simmer for about 3 minutes.  It's going to curl up.  Remove and set aside and save the water for the Rigatoni.  Once it's cooled (at anytime during this entire process), cut the Lobster tails in half long ways and pull out the meat.  Chop into medium size pieces. Set aside.
 


 
 
Thaw the Crawfish and set aside, drained the juice.
 
Lobster Mac Cheese Sauce:
 
 
 
Melt 2 tbl spns of butter in a large skillet on medium heat.  Add the chopped onion and sauté for about 2 minutes.  Add 1 tbl spn all purpose flour and stir continuously to create a lite roux - about 4 minutes until nice and smooth.
 
Add 1 cup white wine or chardonnay slowly and stir.  Then add the chopped Celery.  Lower heat to medium low and stir continuously until reduced by about 1/4. 
 
Slowly add the milk or heavy cream and stir well.
 
 
 
 
 
Add salt to taste - if it's a little salty it's ok....adding the Rigatoni will help.
 
MEANWHILE - add water to the Lobster water and bring to boil.  Add the Rigatoni and cook until al dente. 
 
Preheat oven to 400
 
add all of the cheeses a little at a time and stir until it's all melted and well incorporated.  If it's too thick add water if need be.  It should be kinda thin... 
 
With a slotted spoon or spider, scoop out the cooked Rigatoni and stir into the cheese sauce.
NOTE:  If it's too thick you can use some of the Lobster water to thin it out.  Also, add Basil, Oregano etc. accordingly to your personal taste - or leave it out.
 
Mix the Rigatoni with the cheese sauce and incorporate well.
 
 
 

Add the Lobster tails and Crawfish and mix well.  Taste and season with salt accordingly.
 
Pour everything into an oven safe dish or use the skillet.  Melt 2 table spoons of butter in the microwave.  Add the bread crumbs and Parmesan cheese and stir.
 
 
 
Cover the top of the Lobster Mac N Cheese with the mixture and bake on 400 for about 15 minutes or until golden brown.
