In 2010 we had a concession business.  We traveled around Southeast Texas to various festivals and we were a mainstay at Larry's Trade Days in Winnie Texas each month.  We started out selling smoothies and lattes but it didn't take long for us to realize that we needed to sell food if we were going to actually make any money.

This Nacho Burger is a great burger that is fun to make!  It's not difficult and its packed with flavor.  Salsa's, cheese, peppers, pork...This grilled Nacho Burger will put a smile on your face!

I love Cajun food and I love Tilapia so this just felt so right.  I eat a LOT of Tilapia and chicken to maintain my manly figure and I tend to go from Lemon Pepper to Cajun a few times a week then mix in chicken all around it.  So that's pretty much what I eat during the week and then I let it loose on the weekend.  I think Tilapia is a great way to lose a little weight.  When I need to drop a few pounds I can eat it for 3 or 4 days (yes I get tired of it by then) and I can drop 2 to 3 pounds easily.

I love the creation process of cooking.  I put it just beneath the eating process of cooking.  Worldly flavors are a big turn on for me and I try to incorporate flavors from all over the world in my cooking.  When I cook, my menu is typical American but I just about always infuse more worldly flavors with it.

I'm in the computer / technology business and I'm lucky to be able to sit and visit with my best buddy each morning before the reality of broken computers and phone systems kick in.  He and I like to fish on Lake Toledo Bend lake here in East Texas and Derek had to go to his house and take some fish out of the freezer to thaw for the evening.
